It needs to be a sustainable transition \u2013 and sustainability is a big subject.<\/p>\n<p>The flip side of the food equation is that many agri-businesses&#8217; overuse of the land benefits their bottom lines but damages local air, water and soil systems. Sustainable practices to restore and perpetuate these systems are critical.<\/p>\n<p>As a confection company owner, I\u2019ve made commitments to purchase key staples from regional suppliers:<\/p>\n<ul>\n<li>Cremerie Sweet Cream European-Style Butter from <a href=\"https:\/\/www.larsenscreamery.com\/\">Larsen\u2019s Creamery<\/a> in Oregon;<\/li>\n<li>72% cacao chocolate from <a href=\"https:\/\/www.guittard.com\/\">Guittard Chocolate Co<\/a> in San Francisco;<\/li>\n<li>heavy cream and half-and-half from <a href=\"https:\/\/www.alpenrose.com\/\">Sunshine Dairy-Alpenrose<\/a> in Portland;<\/li>\n<li>flours and grains from <a href=\"https:\/\/www.alpenrose.com\/\">Bob\u2019s Red Mill<\/a> in Milwaukie, Oregon;<\/li>\n<li>artisan cheese from Northwest cheesemakers.<\/li>\n<\/ul>\n<p>We have the <strong><em>luxury<\/em><\/strong> of accessibility and opportunity; that is, the wealth of high-quality regional products and the resources to purchase them. I have the added benefit of using these quality staples in our home kitchen at ~60% of the cost of grocery store retail.<\/p>\n<p><a href=\"https:\/\/onpleasurefulpastry.com\/wp-content\/uploads\/2021\/03\/031521-true-cost.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-747\" src=\"https:\/\/onpleasurefulpastry.com\/wp-content\/uploads\/2021\/03\/031521-true-cost.jpg?w=474\" alt=\"\" width=\"474\" height=\"284\" \/><\/a><\/p>\n<p>Purchasing regionally strengthens local economies and reduces transportation cost \u2013 food miles \u2013 so companies, consumers and the environment benefit. In all honesty, these are easy choices.<\/p>\n<p>Ruminating again on the <em>luxury<\/em> of accessibility and the true cost of cheap food\u2026<\/p>\n<p>&nbsp;<\/p>\n<p><strong><span style=\"color:#008000;\"><em>The ear of Nature<\/em><\/span><\/strong><\/p>\n<p><strong><span style=\"color:#008000;\"><em>listens to what is asked of it.<\/em><\/span><\/strong><\/p>\n<p><strong><span style=\"color:#008000;\"><em>It must be the same act of intense and unfettered listening<\/em><\/span><\/strong><\/p>\n<p><strong><span style=\"color:#008000;\"><em>as when one discloses her deepest secret.<\/em><\/span><\/strong><\/p>\n<p><strong><span style=\"color:#008000;\"><em>Is holding the health of the land na\u00efve?<\/em><\/span><\/strong><\/p>\n<p>&nbsp;<\/p>\n<p>This is a conversation about quality.
