And stays there. Closed eyes texture. My favorite way to get there is low-slow baking. I&#8217;m pretty sure it improves everything.<\/em><\/span><\/p>\n<p>It&#8217;s early, early spring, and if sheer will to bring fruit to market were sufficient, it would have been here two weeks ago. This week my partner, Paul, and I had clandestine knowledge that the first\u00a0<a href=\"https:\/\/extension.oregonstate.edu\/catalog\/pub\/em-9375-day-neutral-strawberry-production-central-oregon#:~:text=Day%2Dneutral%20strawberries%20initiate%20flowers,regions%20such%20as%20Central%20Oregon.\" rel=\"nofollow ugc noopener\">Day-Neutral strawberries<\/a>\u00a0may make a covert appearance at our local farmer&#8217;s market.\u00a0<a href=\"https:\/\/www.portlandfarmersmarket.org\/\" rel=\"nofollow ugc noopener\">The Mother of All Farmers Markets<\/a>. On the campus of Portland State University.<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/substackcdn.com\/image\/fetch\/w_1456,c_limit,f_auto,q_auto:good,fl_progressive:steep\/https%3A%2F%2Fsubstack-post-media.s3.amazonaws.com%2Fpublic%2Fimages%2F9c8c2fcd-deb1-4e24-9a00-1a8152a287f8_2400x1601.png\" \/><\/p>\n<p><em>We dropped everything.<\/em><\/p>\n<p>&nbsp;<\/p>\n<h2>The Torture (Pleasure) of Portland Seasons<\/h2>\n<p>Today, we are still being punished\u2026\u00a0<em>ahem<\/em>\u2026 rewarded, with yet another stage of spring. It may be the Spring of Deception, though The Pollening in Mud Season is an undeniable suitor. Cold, wet misery, one might say.<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/substackcdn.com\/image\/fetch\/f_auto,q_auto:good,fl_progressive:steep\/https%3A%2F%2Fsubstack-post-media.s3.amazonaws.com%2Fpublic%2Fimages%2Fd86bd55f-3ce8-4081-96cf-cbc19564d57c_720x720.webp\" \/><\/p>\n<h3><a href=\"https:\/\/onpleasurefulpastry.com\/wp-admin\/post.php?post=1043&amp;action=edit\">The Pie Day Quandry<\/a><\/h3>\n<p>Here&#8217;s where I get to digress for a teensy bit from the topic at hand, which you cleverly guessed, is a strawberry-balsamic reduction. My as yet unexpressed purpose &#8211; there is often an ulterior motive &#8211; is strawberry pie. And this is where I circle back to flavors hiding in plain sight.<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/substackcdn.com\/image\/fetch\/f_auto,q_auto:good,fl_progressive:steep\/https%3A%2F%2Fsubstack-post-media.s3.amazonaws.com%2Fpublic%2Fimages%2F5909b880-2b31-4ff9-be61-7601243c1a18_4032x3024.jpeg\" \/><\/p>\n<p>My premise is that a savory-silky-saporous reduction would bring the kind of mystery I like to slide into pie. Because pie is everything, and I&#8217;ve ordained that it is pie season &#8211; seasonal naming rights notwithstanding.<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/substackcdn.com\/image\/fetch\/f_auto,q_auto:good,fl_progressive:steep\/https%3A%2F%2Fsubstack-post-media.s3.amazonaws.com%2Fpublic%2Fimages%2Fb455b4ca-f21c-4051-9b82-960bc1458a3c_4032x3024.jpeg\" \/><\/p>\n<p><span style=\"color: #ee4266;\">\u2026\u00a0<em>last season&#8217;s Essential Bing Cherry-Berry Pie\u2122.<\/em><\/span><\/p>\n<p>Last summer, Paul and I in flashes of panic and wisdom, scurried to\u00a0<a href=\"https:\/\/sauvieisland.org\/\" rel=\"nofollow ugc noopener\">Sauvie Island<\/a>\u00a0to purchase a couple of flats of our beloved Oregon\u00a0<a href=\"https:\/\/oregon-berries.com\/variety\/marionberry\/\" rel=\"nofollow ugc noopener\">Marionberry<\/a>. Much more on this indigo jewel as we again approach the two weeks of the year the berry is available.<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/substackcdn.com\/image\/fetch\/f_auto,q_auto:good,fl_progressive:steep\/https%3A%2F%2Fsubstack-post-media.s3.amazonaws.com%2Fpublic%2Fimages%2F9c28aeaa-9dd2-41ea-bab9-5d7ad81861c3_4032x3024.jpeg\" \/><\/p>\n<p>Strawberries and Marionberries\u2026 all blackberries, actually\u2026 have affinity relationships with one another. So the goal today is to build the bones &#8211; a flavor and textural profile &#8211; for\u00a0<strong>Essential Strawberry Pie\u2122<\/strong>.<\/p>\n<p>Predictably, the elusive berries had skillfully slid from the farms into the hands of a\u00a0<a href=\"https:\/\/www.rubinetteproduce.com\/\" rel=\"nofollow ugc noopener\">local fine food vendor<\/a>\u00a0who used the opportunity to charge a generous market rate.<\/p>\n<p><em>We were undeterred.<\/em><\/p>\n<p>Can a pie be aware of its own shortcomings? That&#8217;s what testing and tasting, and testing and tasting, is all about. Applause, applause.<\/p>\n<p>&nbsp;<\/p>\n<h2>Essential Strawberry-Balsamic Reduction<\/h2>\n<p>Yield: 155 grams | enough for 1, 9&#8243; pie<\/p>\n<p>Incorporating a berry reduction into a pie is a low-effort big-payoff step in baking. It&#8217;s infinitely adaptable to your own palate and to the type of seasonal fruit in your market. You&#8217;re taking a small step to guide the overall flavor into being more of, well, itself.<\/p>\n<p>I&#8217;m a huge advocate of keeping a great pantry, both on my shelves and in my freezer. Building those pantry resources over time pays off in every project, every meal.<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/substackcdn.com\/image\/fetch\/f_auto,q_auto:good,fl_progressive:steep\/https%3A%2F%2Fsubstack-post-media.s3.amazonaws.com%2Fpublic%2Fimages%2Ff90c6f19-3cde-49cc-bedc-5b6e7b84ff04_4032x3024.jpeg\" \/><\/p>\n<p>Only one thing needs to be said about balsamic vinegar. If there is anything other than cooked grape must and wine vinegar on the label, take a pass. In the three categories of balsamic vinegar &#8211; Traditional, Condiment Grade, Commercial Grade &#8211; Condiment Grade is a great choice for a reduction. Produced in Modena and typically aged for less than 12 years. (Keep a bottle of Traditional, 12-18 years aged, on your shelf to drizzle over fresh berries, au naturel.)<\/p>\n<h3 class=\"header-anchor-post\">Ingredients<\/h3>\n<div class=\"pencraft pc-display-flex pc-alignItems-center pc-position-absolute pc-reset header-anchor-parent\">\n<div class=\"pencraft pc-display-contents pc-reset _pubTheme_ztq6h_1\">\n<p>300 grams (~1 quart) Day-Neutral strawberries, like Albion<\/p>\n<\/div>\n<\/div>\n<p>rinsed, hulled, quartered<\/p>\n<p>36 grams sugar (3T)<\/p>\n<p>32 ml balsamic vinegar (2T)<\/p>\n<p>10 ml orange flower water (2 tsp) (inexpensive at Halal markets)<\/p>\n<p>5 ml vanilla extract (1 tsp)<\/p>\n<h3 class=\"header-anchor-post\">Procedure<\/h3>\n<div class=\"pencraft pc-display-flex pc-alignItems-center pc-position-absolute pc-reset header-anchor-parent\">\n<div class=\"pencraft pc-display-contents pc-reset _pubTheme_ztq6h_1\">\n<p>Macerate strawberries and sugar, lightly tossed, in a bowl for 20 minutes. Stir in remaining ingredients. Slow-roast on a sheet pan in a 250 F oven for 90 minutes, lightly stirring every 30 minutes.<\/p>\n<\/div>\n<\/div>\n<p><strong>Cook\u2019s note<\/strong>: roasting delicately-flavored creatures like strawberries at low heat preserves their flavor, and allows other ingredients to further promote it.
